Café-Choco Truffles   For the chocolate lovers, rum-infused truffles are a must-try. These decadent treats are made by blending rich dark chocolate with a splash of Cafe rum. The rum enhances the chocolate’s natural depth, and makes for the perfect gift – whether it's to someone else or to yourself. Bonus point is that it’s an easy dessert that can be made with a microwave and a refrigerator. It’s a treat in all senses for those who hate cooking in pans and having to wash them later on.

Ingredients:

  • 8-10 oz dark chocolate (chop it up like you’ve
    got issues with the chocolate)
  • 1/2 cup heavy cream (FULL FAT,
    not low or whipped)
  • 30g   (2tbsp) unsalted butter
  • 3-4  tbsp Cafe Rum (or spill how much
    ever you like)
  • Cocoa  powder or melted chocolate (for coating)

Method:

1.  Microwave chocolate, cream, and butter in a microwave proof bowl. Microwave it on     high for about 4 x 30 second bursts while stirring in between.

2. The chocolate would’ve melted smooth (this is the ganache). Add in the Café Rum and place this mixture in the refrigerator for 6 hours (no shortcut in regards to this. Wait 6 hours)

3. Once firm, roll out the truffle balls onto a tray.

4. Coat them up in cocoa powder or melted chocolate and chill it again before serving.
