Rum-Glazed Pineapple Upside-Down Cake Pineapple slices caramelised with brown sugar and rum,baked to absolute goodness under buttery sponge cake. We’d forever be thankful to whoever came up with this ingenious idea.

Method:
1. Preheat your oven to 350°F (175°C). Melt butter and brown sugar in a skillet, then add rum. Stir until smooth.
2. Arrange pineapple slices and cherries in a baking pan, then pour the rum glaze over the top.
3. In a bowl, whisk together flour, baking powder, and salt.
4. In another bowl, cream, butter, and sugar until light and fluffy. To this, add eggs one at a time, then vanilla.
5. Alternate adding in the dry ingredients and milk, and mix until just combined.
6. Pour the batter over the pineapples and bake for 45-50 minutes.
7. Let cool for a few minutes before flipping it onto a plate.
If you’re lucky, you’ve got a glazed Pineapple-Upside Down Cake or else you’d still have an upside-down cake with random pieces of rum-soaked pineapple around it. Enjoy!
